Filleting a salmonid can be tricky but if you follow these steps you can assure yourself of success. The very first thing you need to do is to get yourself a very sharp knife. A fillet knife is the best choice. I prefer to leave the skin on for barbecue as it helps to keep the fish moist and holds it together.
